Within 24 hours of harvest, the olives are cold-pressed using advanced two-phase decanter machines, designed to operate in a vacuum, eliminating all oxygen from the process. This meticulous method preserves the olives’ natural nutrients, including a high concentration of polyphenols, powerful antioxidants that protect the body from free radicals and promote overall wellness.
