Our olive groves are a testament to time-honored traditions and dedication to quality. Each olive is handpicked at the peak ripeness, ensuring only the best make their way into our oil. Within 24 hours of harvest, the olives are cold-pressed using advanced two-phase decanter machines, designed to operate in a vacuum, eliminating all oxygen from the process. This meticulous method preserves the olives’ natural nutrients, including a high concentration of polyphenols, powerful antioxidants that protect the body from free radicals and promote overall wellness. Our olive oil’s flavor profile shines with grassy green notes of artichoke, and the vibrant essence of a summer garden tomato stalk, a hallmark of its organic purity and artisanal craftsmanship. This year, Phil, Sandy, Cooper, and Maverick have poured their hearts into every step of the process. Our olive grove has thrived thanks to the perfect balance of sun, heat, and rainfall. The roots of our trees have dug deep into the rich Italian soil, soaking up nutrients from the earth to create the most flavorful olives we’ve ever had the pleasure of harvesting.

We’re offering this year’s olive oil in large formats for ease of shipping, storing, and, most importantly, to ensure that it remains as fresh as possible. We know that every chef—and every olive oil lover—has their own personal style of decanter, and we want to make it easy for you to pour the perfect amount straight into your favorite vessel. Whether you’re keeping it on your kitchen counter for everyday use or serving it directly at the dinner table, decanting just the amount you’ll use for the week ensures the rest stays fresh in the can. It’s all about style, convenience, and maintaining the highest quality olive oil.

Did you know…The average Italian family consumes 1 liter of olive oil per week. It’s truly a staple here, essential for both cooking and raw service with this in mind our large-format tins will keep the oil fresh for up to two years (although we have a feeling you’ll be reaching out for more well before that!).
